Food during an IBEX Tour to Belize

Meals at the Cotton Tree Lodge, San Felipe, Belize
Cotton Tree Lodge houses its own restaurant and bar in the Main Lodge facility. Most meals are served family-style at one long table in order to foster a sense of community amongst the group. The lodge restaurant uses local ingredients as much as possible, with much produce coming directly from the on-site organic garden. We offer a combination of local cuisine like calilou, hudut, or serrie, along with more typically American cuisine. Each day the lodge offers a set menu. Most dietary restrictions can be accommodated.
Breakfast is a hot buffet which includes fresh breads, eggs, a breakfast meat, fruit, fresh juice, coffee, and tea. Lunch is either served plated in the Main Lodge or as a packed picnic while out on tour. Lunches may be burritos, quesadillas, sandwiches, rice and beans, or stewed chicken, just to name a few examples. Lunches usually incorporate fresh fruit or salad in addition to the main meal. Dinner begins with appetizers in the bar, followed by soup, salad, entrée, and dessert. Dinner entrees usually include a meat or fish dish, a starch, and vegetables.
Purified drinking water is available in the Main Lodge and in your cabana from 5-gallon containers. It is recommended that you bring your own water bottle to refill throughout the day. The bar offers a variety of tropical cocktails, soft drinks, local beers, and a modest wine list.
On some excursions you may eat with a local Belizean family in their home. You will most likely be treated to a traditional vegetable and chicken soup of ‘caldo’, served with home made corn tortillas. The vegetables and meat you eat will most likely have been raised by the family that serves it to you.
